- 2 Red onions Large about 500 grams
- 1 cup White vinegar 10%
- 1/2 tsp Mustard seed
- 2 tsp Kosher salt
- 2 cups Water
- 5 tsp White sugar
- 3 Bay leaves
- 5 seed Black peppercorns
Peel two medium-sized red onions, about 500 grams for a 1-liter jar. Cut them into thin slices.
Pour boiling water over the onions to soften their texture. Let them sit for about 3 minutes, then drain the water.
Add one or two bay leaves, mustard seeds, and black peppercorns to the jar. Pack the red onions into the jar.
Mix water, white vinegar, salt, and sugar, and stir very well. Pour the mixture over the onions in the jar. Close the lid and keep it in the fridge for at least 2 days before eating.
Mexican pickled red onions - add jalapenos, coriander seeds, and cumin.
