Kale potato pancakes

Ingredients

  • 6 potatoes
  • 4 cups kale
  • 2 eggs
  • 2 tbsp flour
  • 1 tbsp olive oil
  • 1 tbsp black pepper
  • 1 tsp salt

Instructions

  • Wash kale and remove stems. Place in a food processor. Blend for 10-15 seconds.
  • Peel potatoes and finely grate them. Combine with blended kale.
  • Mix in egg, black pepper and salt. Add flour and mix well.
  • Heat olive oil in a large frying pan over medium high heat. Fry pancakes 4 minutes on each side. Place on the paper towel to drain any olive oil. Serve while hot.
