Egg Bacon Pastrami on English Muffin Breakfast Sandwich

Breakfast is the most important meal of the day, so we are going for some delicious flavors combined in the form of a English muffin breakfast sandwich. Today we are serving a breakfast sandwich on English muffin with hickory-smoked bacon, pastrami, scrambled egg with Colby jack shredded cheese. Our toppings are avocado, English cucumber.
You will need these delicious breakfast ingredients to make this sandwich;
English muffin (buy or make your own).
Bacon (hickory smoked)
Pastrami (purchased in a local deli store called “Rubinos”)
Avocado (fresh avocado)
English cucumber
Egg (scrambled with a Colby Jack cheese)
Milk
Butter
As a busy Dad, here in there, I find myself craving make-ahead English muffin breakfast. I always had a thing for English muffins with eggs. Either this is scrambled, pan-fried, sunny side up, poached egg, or any other form. Today was the day where I woke up and craved that exact sandwich, with some excellent toppings.
I went for hickory-smoked bacon, pastrami, avocado, English cucumber, and of course, shredded Colby Jack cheese to mix in in my scrambled eggs.
This English muffin egg breakfast sandwich is easy to make, it only needs five core ingredients, and it doesn’t take a much time to make, so when you need to hit the road and get going, it will feel your belly and keep you going until lunch hits. Or even better make ahead a few sandwiches, and it will carry you through lunch too.
Like usual my seven year old woke up and wanted some cheerios for his breakfast, my five years old also had cereal, so my morning was pretty much free to play around in the kitchen and experiment with English muffin sandwiches 🙂 .
What kind of English muffins should I get?
That all depends on what kind of sandwich you are planning to make. There are quite a few different flavors available such us; apple cinnamon, cranberry, cinnamon raisin, honey wheat, blueberry, and many others. So if you are choosing to make a sandwich more on a sweet side, you can nicely pair flavored muffins with some other ingredients that go well with these.
If you are going to make an egg-based muffin sandwich, we suggest you stay with whole wheat or whole grain-based muffins. They, on average, contain 100 plus calories and are more healthy for you.
How to make an English muffin breakfast sandwich?
Do I need an English muffin sandwich maker? The answer is NO.
Equipment needed: Cast iron skillet or a frying pan. Optional (Toaster oven)
Step 1
Bring the skillet or a cast iron to medium heat and add the bacon. Pan-fry bacon until it’s crispy and set aside on a paper towel. Optionally you can bake the bacon in the oven.
Step 2
Slice the muffin into halves, and spread the butter. Place the previously buttered muffin halves in the skillet, butter side down, and keep it there until you have the egg fried.
Step 3
Preheat small pan to medium-high. Crack the egg into a small mixing ball, add milk, salt, pepper, shredded cheese and mix it well. Cook until scrambled. Remove muffins and set them onto the plate.
Step 4
Slice English cucumber and avocado, get them ready for your best English muffin breakfast sandwich!
Step 5
Once the eggs are done to your desired texture, transfer the egg onto a muffin, add a slice of bacon, avocado, cucumber, pastrami slice, some more scrambled egg to top everything off. Serve while hot, or you can take wrap it and take it to go for later.

Toast the muffin at the very end so they don't get cold. Pan-fry bacon and transfer to paper towel to drain the fat. Eggs mixed with shredded cheese will keep will make the egg stay nicely on a muffin.
