A Taste of Home: Polish Roots
This salad is more than just a healthy side dish; it’s a nostalgic recipe with roots in Poland, where I grew up. Cabbage is a staple in Polish cuisine, often featured in various salads and side dishes. This recipe is my version of traditional Polish cabbage salad, which is typically light, fresh, and flavorful. By omitting the mayo, this version stays true to the clean and straightforward flavors of the dishes I enjoyed during childhood.
Why Choose Green Cabbage?
Green cabbage is not only versatile but also packed with nutrients. Its low calories make it an excellent choice for those watching their weight. Chopped green cabbage is a dieter’s dream: it provides a generous cupful of food for only 22 calories, helping you feel full and satisfied. It’s also low in carbs, with just 5 grams per cup, which makes it ideal for low-carb diets.
Moreover, the benefits of green cabbage extend beyond its calorie count. It contains vitamins C and K, antioxidants, and fiber, all of which contribute to overall health. Regular cabbage consumption can aid digestion, reduce inflammation, and support heart health.
Green Cabbage Slaw Recipe (No Mayo)
This recipe is designed for people who would love to have a healthier version of cabbage slaw. It replaces mayonnaise with a simple lemon juice, olive oil, and honey dressing. The result is a light, tangy slaw that pairs perfectly with sandwiches, grilled meats, or as a standalone salad.
Cabbage salad ingredients are simple:
- Green Cabbage
- Carrots
- Lemons (Freshly squeezed)
- Olive Oil
- Raw Honey
- Black Pepper (Freshly ground)
- Sweet Onion
- Cilantro (as garnish)
Step 1: Prepare and shred cabbage.
Begin by washing the cabbage and removing any loose leaves. I prefer using a knife to shred the cabbage but feel free to use any tool you’re comfortable with.
Step 2: grate the carrots.
Wash and peel the carrots. Take a carrot, hold it against the sharp blades of the box grater, and then move it up and down or back and forth to create the shredded carrots. You’d continue until all the carrots are grated, then add them to the bowl with the cabbage.
Step 3: Thinly slice the sweet onion and add it.
Step 4: Whip up the dressing with freshly squeezed lemon juice.
I recently got a Citrus Squeezer (a total game-changer; I highly recommend it!) and used it to juice the lemons for this dressing. Then, I whisked in some olive oil, raw honey, and freshly ground black pepper.
Step 5: Remember to mix all into a large bowl. Use your hands to do so.
Chill and Serve:
Remember that this salad is best when it cools down a little bit. Place it in the fridge, let the flavors pop, and give it 30 minutes or so. Serve chilled, and enjoy this refreshing and healthy side dish.
