Stuffed Tomatoes

Stuffed tomatoes with sharp cheddar cheese and pan fried bacon. A delicious appetizer for any occasion. This simple stuffed tomato recipe will make your tomatoes taste a bit better and make your guests happy. I was lucky enough to use my home garden organic tomatoes for this recipe.
Our garden has produced a significant amount of tomatoes this year. So naturally we wanted to try something new this year. Stuffed tomatoes with fresh organic tomatoes sounded very appealing. 🙂
It doesn’t take much effort or time to prepare this delicious appetizer. It’s a matter of cutting the tomatoes in half horizontally, scooping out the pulp and stuffing them with tasty cheddar cheese and, bacon.
So ready, set, GO! 🙂 Scoop out and save the pulp, we will be using this for our tomato stuffing. I used a sharp knife and small spoon to take care of the tomatoes, of course after cutting them in halves.
Stuffing – It’s so easy to prepare, it takes just a few ingredients;
- bacon
- sharp cheddar cheese
- mayo
- sour cream
- chopped basil
and of course some salt and freshly ground black pepper. So pan fry the bacon, dice and, mix all together with cheese, mayo, sour cream. Season with salt and pepper.
Next step is your last step 🙂 , Stuff tomatoes with filling, season with salt and, black pepper. Garnish with fresh basil. Enjoy!
Serve cold and enjoy!

These delicious tomatoes are stuffed with sharp cheddar cheese and pan fried bacon!
- 6 medium Tomatoes
- 2 slices Bacon Pan fried
- 2 leaves Basil
- 1/2 tsp Black pepper
- 1 pinch Salt
- 1 cup Sharp cheddar cheese
- 2 tbsp Mayonnaise
- 1 tbsp Sour cream

Cut tomatoes in halves horizontally.

Scoop out pulp and place it in small bowl.

Pan fry two slices of bacon and, dice in a small pieces.

Chop basil leaf and add to stuffing.

Combine cheddar cheese, bacon, mayo, sour cream and mix well.

Fill tomatoes with stuffing, garnish with basil. Serve and enjoy!
Last year I had so many tomatoes that I could have made this recipe almost every other day. Brilliant idea to make stuffed tomatoes!
