Kale Potato Pancakes

I love potatoes in any form or shape. I wanted to try something healthier this time around. Kale potato pancakes were on my mind for a long time.
Recently me and my wife and our two year old toddler fell in love with kale smoothies, I figure it would be great idea to try a new approach to a potato pancakes. Thus idea for kale potato pancakes was born 🙂
Look at this healthy Kale and potatoes, as you can see it does not take to many ingredients to create this delicious pancakes.
So where do we begin? Well, we need to make sure our kale is ready to mix with shredded potatoes. I used a food processor to blend the kale.
Once we have our kale out of the food processor we can begin shredding potatoes.
Now mix the potatoes, kale, eggs, flour, black pepper and olive oil.
Fry the pancakes for about 3-4 minutes on each side.
After about 3 to 4 minutes on the frying pan they turn into these golden/brown and green amazing pancakes!

Delicious green Kale potato pancakes. Great side dish for any hungry soul.
- 6 potatoes
- 4 cups kale
- 2 eggs
- 2 tbsp flour
- 1 tbsp olive oil
- 1 tbsp black pepper
- 1 tsp salt

Wash kale and remove stems. Place in a food processor. Blend for 10-15 seconds.

Peel potatoes and finely grate them. Combine with blended kale.

Mix in egg, black pepper and salt. Add flour and mix well.

Heat olive oil in a large frying pan over medium high heat. Fry pancakes 4 minutes on each side. Place on the paper towel to drain any olive oil. Serve while hot.
